The First East Texas Spanish Cookbook - This is another of our historical cookbooks that includes much more than recipes. It covers the period when Spain sent the fist European immigrants into East Texas to build missions and communities. The first were mostly soldiers, thus single men. They married Indian women and their foods became very Indian-like. Their descendants still make Indian hot tamales and homny stews. One of their early methods of cookery was in pits dug in the ground. They had no stoves or ovens and this was how they slow-cooked their foods. This is fully explained with pictures in this book.
